Sugar and natural sweeteners
Cane sugar differs from classic white sugar made from sugar beets in that it is unrefined. This preserves all the nutritional value of the sugarcane. Cane sugar with the addition of cinnamon or vanilla bourbon is a wonderful sweetener for desserts and baked goods, adding not only sweetness but also an additional caramel flavor.
Coconut sugar is obtained from the inflorescences of the coconut palm. The sap that drips from them is evaporated, and the remaining thick mass is heated to form loose crystals, similar to those found in traditional sugar. Coconut sugar has a delicate coconut and caramel flavor.
Erythritol is a sweet substance derived from naturally occurring plants. It looks like table sugar but is about 30% less sweet. This natural sweetener is completely excreted from the body, so it doesn't provide energy in the form of calories. Its glycemic index is 0 , meaning it doesn't affect blood glucose or insulin levels. Therefore, erythritol is a very good sweetener for diabetics and those trying to lose weight.
Xylitol is most often obtained from birch trees, which is why it's also called natural birch sugar . It can also be made from other plants. It tastes virtually the same as traditional sugar, but provides about 40% fewer calories. Xylitol also has antibacterial properties, preventing tooth decay and oral infections. It has a low glycemic index, making it a good sweetener for diabetics.
Agave syrup comes from Mexico, the main producer of this sweetener. It's made from two varieties of agave— Agave tequilana and Agave salmiana . It's about three times sweeter than sugar, yet maintains a relatively low glycemic index. Agave syrup has a liquid consistency, comes in light or dark colors, and is used as an addition to various desserts, cakes, and cocktails. Light agave syrup is sweeter and milder, while dark agave syrup has a more intense, caramel-like flavor.
Stevia is a natural sweetener obtained from the Stevia rebaudiana plant. Native to Central and South America, it has been used as a sweetener in this region for hundreds of years. Stevia is used as a sugar substitute – it is significantly sweeter, has a slightly different taste, and contains virtually no calories. It comes in various forms: leaves, lozenges, liquid, and powder. It has many uses.
