Ceylon cinnamon, also called true cinnamon, comes from the bark of the cinnamon tree ( Cinnamomum verum ), which is a native species growing primarily in Ceylon (now Sri Lanka), although it is also cultivated in other tropical regions of the world. It is one of the two main varieties of cinnamon, the other being cassia (Chinese) cinnamon, which comes from the bark of another plant in the genus Cinnamomum .
