Tapioca is derived from cassava starch and is virtually tasteless and odorless. It is used to prepare desserts (custards, puddings) and to thicken sauces and soups.
Tapioca balls are also an ingredient of Bubble Tea.

Preparation method
Place in boiling water and cook for about 15 minutes. Leave for a few hours and cook again until the balls are transparent.
