Universal gluten-free baking mix 500 g - Pięć Przemian

The Five Transformations gluten-free universal mix is a versatile baking and cooking product, created with those following a gluten-free diet in mind. It contains gluten-free oat flour and oat bran concentrate rich in beta-glucan.

The mix is suitable for preparing bread, pancakes, fritters and waffles - one package replaces several different flours and allows you to achieve good results without having to compose the mix yourself.

Ingredients

White rice flour, gluten-free oat flour, arrowroot, tapioca, gluten-free oat bran concentrate (10% beta-glucan).

Preparation method

Bread

  1. Pour 500g of the mixture into a bowl. Add 7g of instant yeast and 7g of salt.
  2. Mix thoroughly and add 500 ml of boiled, warm water (max. 40°C).
  3. Cover the dough with a cloth and place in a warm oven (30–40°C) for about 50 minutes to rise.
  4. Grease a baking pan (small cake tin) with coconut oil or clarified butter and sprinkle with gluten-free flour.
  5. Mix the risen dough and transfer it to the baking tin.
  6. Bake in an oven preheated to 190°C for approximately 70 minutes.

Pancakes

  1. Pour 250 g of the mixture into a bowl, add 200 ml of milk (can be plant-based) and 1 egg.
  2. Mix thoroughly (you can use a blender, mixer or whisk).
  3. Fry in a small amount of fat (preferably coconut oil or clarified butter) until golden brown on both sides. If the batter in the bowl thickens, add more liquid.

Pancakes

  1. Pour 200g of the mixture into a bowl, add 400ml of kefir, about ½ teaspoon of baking soda, and 1 egg. Mix thoroughly. You can sweeten the mixture to your liking (e.g., with 2 tablespoons of erythritol). You can add chopped apples or other fruit to the batter.
  2. Fry over low heat, preferably in clarified butter or coconut oil.

Waffles

  1. Preheat the waffle iron.
  2. Pour 350g of the mixture into a bowl, add 7g of baking powder (about 1 teaspoon), 1 egg, and 300ml of milk (plant-based milk is fine). Mix thoroughly. Sweeten the mixture to your liking (e.g., 2 tablespoons of erythritol).
  3. Pour batter into a waffle iron in batches and bake until golden brown. If the batter in the bowl thickens, add more liquid.

Recommended storage conditions

Store in a cool, dry place, tightly closed.
