Where does it come from?
The beans used to produce this cocoa come from the Popayán region, located in the department of Cauca, in southwestern Colombia, at the foot of the Andes. Colombia is one of the countries officially classified by the International Cocoa Organization (ICCO) as a producer of Fine Flavor cocoa, and the Criollo and Trinitario varieties grown here are valued for their noble, diverse aromatic profile.
Taste profile
Colombia Popayan is a cocoa with an intense, earthy, and dry character, with a noticeable, well-balanced bitterness typical of non-alkalized cocoa. The absence of the alkalization process makes the taste more raw and cocoa-like than in milder, Dutch varieties, with delicate, fruity notes in the background.
Thanks to its distinct taste, Colombia Popayan will be perfect as a base for a traditional hot or cold cocoa drink, as well as an ingredient in baked goods where a deep, chocolate aroma is important – brownies, chocolate cakes, or gingerbread.
This cocoa also works well as an addition to cocktails, smoothies, oatmeal, or homemade muesli, where its intense, dry character clearly stands out against other ingredients.
