Ceremonial cacao (full-fat cacao paste, cacao liquor) of the Trinitario variety, comes from Venezuela — from the renowned Sur del Lago region, located below Lake Maracaibo.

It is characterized by a delicate, fruity taste with notes of wood and nuts, low acidity, and a smooth finish. The beans are subjected to low roasting (115°C for 50 minutes), which fully reveals their natural sensory qualities, while preserving subtle aromas and creating a smooth, well-balanced flavor profile.

Ceremonial Cacao from Venezuela

The Sur del Lago region, nestled in the shadow of Lake Maracaibo in Venezuela, has been famous for centuries for cultivating cacao considered among the best in the world. The beans are hand-picked and carefully selected, then fermented and dried, which gives them a unique flavor profile. The dominant variety here is Trinitario — a hybrid of the noble Criollo and the robust Forastero — combining flavor complexity with plant resilience.

Sur del Lago ceremonial cacao is a raw, unskimmed product, free from any additives, thus retaining the full natural nutritional value. It contains theobromine, which has a mild stimulating effect — similar to caffeine, but without sudden energy spikes — and a rich set of antioxidants, including flavonoids, which support cell protection against free radicals.

Properties of Cacao

Regular consumption of ceremonial cacao can support cardiovascular function through its beneficial effects on blood pressure and blood vessel elasticity.

Preparation method

Add the desired portion of cacao to water or a plant-based drink at about 60-80°C and blend. An example ratio is 10g of cacao per 250ml of water.
