Origin and Variety
Perla is a variety developed by the Hacienda Victoria team through the crossbreeding of Trinitario and Criollo cacao. The cacao comes from a single plantation in a single country (single origin, single plantation), resulting in a consistent flavor profile that can be traced back to a specific growing location. Ecuador has long been a major producer of fine cacao, and Trinitario is one of the variety groups prized for its complex aroma.
According to the producer, the plantation provides a stable income for over a hundred families, and Hacienda Victoria is carbon neutral.
Flavor Profile and Processing
The beans are roasted at a low temperature (115°C for 45 minutes) to preserve the natural sensory characteristics of the raw material. The flavor and aroma feature notes of cookies, white fruit, honey, and Spanish turrón nougat, with a delicate nutty undertone and floral finish. The drink is smooth, balanced, and naturally sweet, despite the product containing no added sugar.
Uses
Perla cacao paste is primarily intended for preparing a hot cacao drink with water or milk, including plant-based milk. It also works well as a base for homemade drinking chocolate, as an addition to desserts, smoothie bowls, and baked goods. The product is vegan.
