Ceremonial cacao (full-fat cacao paste, cacao mass) of the Hispaniola variety with Criollo admixtures, comes from the Dominican Republic and is carefully selected by the family-owned company Rizek Cacao, one of the most important players in high-quality cacao production on the island since 1905. The beans come from precisely controlled Rizek post-harvest centers.

The flavor profile is very clean and intense: deep, full chocolate notes, distinct fruitiness – ripe bananas, red berries, plums, raisins – subtle hints of citrus, florality, and delicate sweetness with Caribbean warmth. Very mild bitterness and low astringency – a classic fine flavor from the Dominican Republic in a premium edition.

Ceremonial cacao from the Dominican Republic

The Dominican Republic is among the leading producers of organic cacao worldwide – the country supplies a significant portion of the global supply of certified organic cacao. The family-owned company Rizek Cacao, operating for over a hundred years, is one of the pillars of the Dominican cacao industry and sets standards for post-harvest quality: precise fermentation and drying allow the full natural potential of Trinitario beans to be revealed, combining the complex flavor of noble Criollo with the resilience of Forastero.

Hispaniola ceremonial cacao is a raw, non-defatted product without any additives, thus retaining its full natural nutritional value. It contains theobromine, which provides a gentle stimulating effect without sudden energy spikes, as well as a rich set of flavonoids and antioxidants that support cell protection against free radical damage.

Properties of cacao

Regular consumption of ceremonial cacao can support the cardiovascular system by positively influencing blood pressure and blood vessel elasticity.

Magnesium present in cacao helps reduce nervous tension and improve sleep quality, while natural compounds such as phenylethylamine (PEA) can contribute to an improved mood and well-being.

Cacao is also a source of iron, zinc, chromium, potassium, and phosphorus, as well as B vitamins, vitamin E, K, and folic acid.

Preparation method

Add the desired portion of cacao to water or a plant-based drink at a temperature of approx. 60-80°C and blend. An example ratio is 10 g of cacao per 250 ml of water.

Optionally, you can supplement the drink with additions, e.g., cinnamon, chili, or other spices.

Recommended storage conditions

Store in a dry and cool place.
