Description
Dominicana Conacado Organic Ceremonial Cacao 250 g - Chocante
Dominicana Conacado ceremonial cacao by Chocante is an organic, full-fat cacao paste (cacao mucilage) made exclusively from ground Trinitario cacao beans from the Dominican Republic. The product is neither sweetened nor flavored, making it ideal for preparing a thick cacao drink or as a base for desserts.
Trinitario is a variety created by crossing Criollo and Forastero on Trinidad. It combines the aromatic qualities typical of Criollo with the greater plant resistance characteristic of Forastero and is one of the most widely grown cacao varieties with excellent flavor.

Taste and aroma
A drink made from this cacao has an intense chocolate flavor with subtle caramel notes on the finish. The cacao has very low acidity, resulting in a mild and rounded flavor without pronounced fruity or bitter notes.
Origin and producer
The cacao comes from Conacado, a Dominican Republic agricultural cooperative that has been operating for over 33 years and includes nearly 200 cooperatives. Several thousand small-scale producers participate in the cooperative, and the average farm covers approximately 4 hectares. The cacao trees grow in the shade of native trees in the region, as well as banana, citrus, and avocado trees, the fruit of which is sold at local markets.
Conacado is certified organic and is a member of Rainforest Alliance. Nearly half of the beans collected by the cooperative are sold under Fairtrade principles. Additional funds from this are used, among other things, to purchase equipment and build warehouses, and the cooperative employs 30 agricultural advisors who help farmers transition to organic farming and plant new trees. Fairtrade funds have also supported local communities: renovating and building schools, providing scholarships for children from poorer families, establishing a computer center and a health center, and funding projects that provide access to clean water.
Uses
The cacao paste comes in lumps, which should be chopped or grated before use. Dissolved in hot water or a plant-based drink, it creates a velvety beverage traditionally prepared during cacao ceremonies. Since the product contains no added sugar, the sweetness of the drink can be adjusted to taste, and the flavor can be enhanced with cinnamon, cardamom, chili, or a pinch of salt.
The cacao can also be used in the kitchen: for homemade chocolates and pralines, creams, ganache, baked goods, and desserts that require an intense chocolate base. As a single-ingredient product that is gluten-free and contains no ingredients of animal origin, it is suitable for a vegan diet.
