Description
Ceremonial Cacao Colombia Porcelana Blanca 250 g - Chocante
Porcelana Blanca cacao is one of the rarest and most sought-after cacao raw materials in the world – a variety of the Criollo species, colloquially known as the "princess of cacao." It originates from the Antioquia region of Colombia, where it is cultivated in small quantities by local farmers.
Chocante cacao paste of this variety is a minimally processed product: 100% cacao mass without any additives.
- Species: Criollo
- Taste: Semi-sweet
- Origin: Colombia
- Packaging: resealable bag
Cacao paste, also known as cacao liquor, is made by grinding roasted beans into a uniform, thick mass. It naturally contains cacao butter, which gives it its characteristic consistency – solid at low temperatures, soft and pliable when warm. The product contains no sugar or additives, so the bitterness is significant.
Flavor profile
Porcelana Blanca beans are distinguished by their characteristic white to porcelain color and exceptional fragility – a trait typical of the noblest Criollo varieties.
The flavor profile is dynamic and multi-layered: intense and full at first, with distinct notes of ripe pineapple and exotic starfruit, which gradually give way to floral and woody tones.
Cacao notes, classically understood, are deliberately subdued here – it is the secondary fruity and floral notes that dominate the long, complex finish.
Culinary and ceremonial uses
Porcelana Blanca cacao paste can be used as a base for homemade chocolate (simply combine with coconut oil and a natural sweetener), for preparing ceremonial cacao drinks (dissolved in hot water or plant-based milk), and as an ingredient in desserts, truffles, glazes, and mousses.
Thanks to its unique aromatic profile, it also works well as an ingredient in infusions consumed during relaxation techniques and mindfulness practices – hence the term "ceremonial."
