Organic kuzu root starch. It is an odorless and tasteless alternative to potato starch and gelatin.
Gray kuzu has many culinary and medicinal properties. It can be used as:
- A thickening and binding agent for soups, sauces, jellies, puddings, icings, and cake fillings, kuzu szare is an excellent alternative to gelatin or potato starch, as it does not affect the flavor of the dish and also works well in sour dishes or as an egg substitute.
- A remedy for stomach and intestinal ailments. Gray kuzu helps eliminate discomfort caused by acidity, bacterial infections, diarrhea, nausea, and headaches. A gruel made from kuzu starch provides relief and soothes irritation.

Preparation method
Dissolve 2-3 tablespoons of kuzu in 250 ml of cold water. Stir until dissolved and smooth. Then add to the dish and simmer over low heat.
