The product is made from the ancient Arriba Nacional variety, considered a national treasure of Ecuador. Hacienda Victoria is renowned for being one of the few plantations to have reintroduced the genetically pure Arriba variety, protecting it from cross-breeding.
Flavor profile
Ecuador Arriba Nacional Victoria is classified as a Fino de Aroma cocoa. Its flavor is exceptionally rich and multi-layered:
-
Dominant notes: Intense chocolate combined with the freshness of fruit and flowers (often with a hint of jasmine or orange blossom).
-
Finish: Noticeable accents of nuts, earth and delicate spices.
-
Character: It is characterized by low acidity and no irritating bitterness, which makes it very accessible even for people starting their adventure with ceremonial cocoa.
Cocoa comes in hard lumps and should be chopped before use. It tastes best when prepared with water or plant-based milk at a temperature of up to 80°C, with a pinch of chili or cinnamon added, which enhances its natural flavor.
