Honeydew honey, also known as royal or papal honey, is made from the honeydew of deciduous and coniferous trees. It is one of the honeys with the most valuable nutritional properties.
Honeydew is a sweet liquid appearing as dots on needles and branches, produced by aphids, scale insects, or lungworts. These insects suck the sap from plants, process it, and excrete it as honeydew. Bees then collect it and produce honey.
Honey varies in color and flavor depending on the plant from which it was obtained. Honey made from coniferous honeydew has a milder flavor, a less intense aroma, and a very dark color. Honey made from deciduous honeydew, on the other hand, has a slightly bitter flavor, a spicy aroma, and a light or dark brown color.
