Organic whole wheat flour made from the Grodkowice ostrich wheat. This regional variety of common winter wheat is highly winter-hardy and resistant to diseases and pests. It has a relatively large, red grain. Its name comes from the village of Grodkowice, located near Kraków. Before the war, ostrich was cultivated in this region.
Flour made from Ostrka Grodkowicka can be used for baking whole-grain bread, rolls, cakes, and other baked goods. Type 2000 refers to whole-grain (whole-wheat) flour, made by grinding whole wheat grains without refining. This dark flour is rich in fiber, vitamins, and minerals.
The flour comes from the farm of Andrzej Wnęk, who cultivates organic grains. He is a member of the Lipnickie Smaki project – an association of more than a dozen farmers from the Lipnica Murowana region (Lesser Poland Voivodeship) who have maintained the tradition of cultivating old grain varieties for many years.
