Guar gum is a natural polysaccharide obtained from the seeds of the guar plant ( Cyamopsis tetragonolobus ). It is a whitish powder with thickening, stabilizing, and emulsifying properties, making it a valued ingredient in the food, pharmaceutical, and cosmetics industries.

Guar gum is soluble in water, forming highly viscous solutions that are stable over a wide pH range. Thanks to these properties, guar gum is used as a thickener in products such as ice cream, sauces, and baked goods, as well as a stabilizer in beverages and dairy products.
